Peanut Butter Brownie Cupcakes

Peanut Butter Brownie Recipe: 

Prep Time: 25 Mins
Bake Time: 20-25 Mins @ 350°C

Ingredients

  • 1 box of brownie mix
  • 24 Large Ritz crackers
  • 1/2 cup peanut butter

Method

  1. Spread peanut butter on one side of the cracker, creating a peanut butter cracker sandwich 🙂
  2. Follow instructions for brownie mix on back of box
  3. Add cupcake liners, filling only 1/4 full of batter
  4. Place cracker sandwich on batter, filling remaining batter on top
  5. Bake for 20-25 minutes

Peanut Butter Frosting

Ingredients

  • 1 cup peanut butter
  • 1 cup butter
  • 1/4 cup milk
  • 4 cups confectioner’s sugar, sifted
  • 2 tsp vanilla extract

Method

  1. In a bowl with a hand mixer at high speed (or a stand mixer with the paddle attachment), cream butter until light and fluffy
  2. Add peanut butter and continue to mix until well combined
  3. Add vanilla
  4. Turn down the speed of your mixing tool and slowly add half of the confectioner’s sugar, scrape down the sides of the bowl during this process
  5. Slowly add milk
  6. Add remaining confectioner’s sugar
  7. Dollop icing onto brownie cupcake once completely cooled
